Seafood Laksa

This is a really colourful and easy mid-week supper. Using seafood, as opposed to chicken or pork, makes this dish really quick to whip up, and the recipe below makes enough for about 3-4 people, so you can enjoy it two nights in a row or for lunch the following day.
